How to make Butter Chicken MomosIngredients for Momo Stuffing-Chicken mince 200 gramsGaram masala powder 1/2 teaspoonGarlic finely chopped 1/2 tablespoonGinger finely chopped 2 teaspoonsRed chilli powder 1 1/2 teaspoonsSalt to tasteFenugreek leaves (kasuri methi) powder 1/4 teaspoonCloves 3-4Ghee 2 teaspoonsIngredients for Momo Dough-Refined Flour 1 and 1/2cupSalt 1tspBaking soda 1 tspBaking powder 1tspWater 8 -10 tbsp GravyIngredients for Gravy-Oil 1 tablespoonButter 1 tablespoonCloves 3-4Green cardamoms 2-3Mace 1 bladeCinnamon 1 noGinger-garlic paste 1 tablespoonFresh tomato puree 1 1/2 cupsTomato puree 1/2 cupSalt to tasteRed chilli powder 1/2 teaspoonGaram masala powder 1/2 teaspoonDried fenugreek leaves (Kasuri methi) powder 1/4 teaspoonHoney 1/2 teaspoonFresh cream 1/4 cup + to garnish.Fresh coriander leaves to garnish Method –To make the momos, take chicken in a mixing bowl and add garam masala powder, garlic, ginger, red chilli powder, salt and dried fenugreek powder and mix well.· Divide the dough into equal portions and shape into balls. Cut out roundels with a medium sized cookie cutter. Place some mince mixture in the centre of each roundel, apply water on the edges and bring the sides together.· Steam the momos for 10-12 minutes. Take them off the heat.· To make the gravy, heat oil in a non-stick pan, add butter and let it melt. Add cloves, green cardamoms, and mace, mix and sauté till fragrant. Add ginger-garlic paste, mix and sauté for 1 minute. Add fresh and canned tomato puree, mix well and saute for 3-4 minutes on medium heat.· Add salt and red chilli powder and mix well. Cover and cook for 3-4 minutes or till oil separates.· Strain the mixture into another non-stick pan and place it on heat. Heat oil in a pan and fry all Coriander and cumin seeds for 10 seconds followed by all the spices, fry the spices for 15 seconds.2. Mix the spices with mashed potatoes along with chopped fresh coriander, amchur and chaat masala.3. Cut the jalapeños chillies in half and scrape out the seeds.4. Stuff the chillies with the potato mixture and chill it for 15 mins.5. Prepare the batter, mix all the ingredients in a bowl and then dip the stuffed chillies in the batter and deep fry till crispy and golden.6.
